Ingredients

  • 4 c. coarsely chopped, peeled apple
  • 2 c. sugar
  • 2 eggs
  • 1/2 c. vegetable oil
  • 2 tsp. vanilla
  • 2 c. sifted all-purpose flour
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 1 c. chopped walnuts

Method

  1. Grate apples on coarse side of grater. Combine apples and sugar, let stand.
  2. Beat eggs slightly. Beat in oil and vanilla.
  3. Mix and sift flour, baking soda, cinnamon, and salt. Stir into egg mixture alternately with apple sugar mixture. Stir in walnuts.
  4. Pour into greased and floured oblong pan 13 x 9 x 2 inches. Bake in preheated 350 degree oven 45 minutes or until cake tests done. Let cool.

Lemon Butter Frosting

  1. Cream 4 Tbsp butter.
  2. Add 3 c. sifted confectioners sugar gradually, creaming thoroughly.
  3. Beat in 2 Tbsp lemon juice and 1-2 Tbsp cold water to make spreadable.
  4. Beat in pinch of salt. Spread on cake.
