Bran Muffins

Ingredients
- 3/4 C sugar
- 1/2 C vegetable oil
- 2 eggs
- 2 C buttermilk
- 2 1/2 C flour
- 1 C boiling water
- 2 1/2 tsp salt
- 2 C All Bran
- 1 C Bran Buds (or Bran Flakes)
Method
- Add boiling water to All Bran and Buds; cover and set aside
- Mix sugar, eggs, oil, and buttermilk in large bowl
- Sift dry ingredients and add to above
- Add Bran mixture and stir
- Cover and let stand overnight in refrigerator
- Preheat oven to 400 degrees
- Pour in greased muffin tins
- Bake 20-25 minutes
