Ingredients
- 4 c. coarsely chopped, peeled apple
- 2 c. sugar
- 2 eggs
- 1/2 c. vegetable oil
- 2 tsp. vanilla
- 2 c. sifted all-purpose flour
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1 tsp. salt
- 1 c. chopped walnuts
Method
- Grate apples on coarse side of grater. Combine apples and sugar, let stand.
- Beat eggs slightly. Beat in oil and vanilla.
- Mix and sift flour, baking soda, cinnamon, and salt. Stir into egg mixture alternately with apple sugar mixture. Stir in walnuts.
- Pour into greased and floured oblong pan 13 x 9 x 2 inches. Bake in preheated 350 degree oven 45 minutes or until cake tests done. Let cool.
Lemon Butter Frosting
- Cream 4 Tbsp butter.
- Add 3 c. sifted confectioners sugar gradually, creaming thoroughly.
- Beat in 2 Tbsp lemon juice and 1-2 Tbsp cold water to make spreadable.
- Beat in pinch of salt. Spread on cake.
