Quick Okra (Jhatpat Bhindi)

Ingredients

  • 12 oz. okra
  • 1 medium onion, sliced finely
  • 3 tbsp oil
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 tsp turmeric
  • 1/2 tsp garem masala
  • 1/2 tsp cayene
  • 1/2 tsp salt
  • squeeze of lemon juice

Method

  1. Heat oil on medium-high heat. Add okra and cook for 6 minutes or until soft.
  2. Add spices, turn heat to low, and cook 2 minutes
  3. Remove okra, turn heat to medium high and add onions. Cook until they begin to soften.
  4. Return okra to pan and cook 3 minutes
  5. Add lemon juice
