Bran Muffins

Ingredients

  • 3/4 C sugar
  • 1/2 C vegetable oil
  • 2 eggs
  • 2 C buttermilk
  • 2 1/2 C flour
  • 1 C boiling water
  • 2 1/2 tsp salt
  • 2 C All Bran
  • 1 C Bran Buds (or Bran Flakes)

Method

  1. Add boiling water to All Bran and Buds; cover and set aside
  2. Mix sugar, eggs, oil, and buttermilk in large bowl
  3. Sift dry ingredients and add to above
  4. Add Bran mixture and stir
  5. Cover and let stand overnight in refrigerator
  6. Preheat oven to 400 degrees
  7. Pour in greased muffin tins
  8. Bake 20-25 minutes
